Enchiladas

I made enchiladas last night and I wanted to share my recipe with you. I have been making these for years.

Here is the recipe:


Gather your ingredients

Put half a can of green enchilada sauce in a pan
Along with 1 block cream cheese
5 green onions (chopped),
and 1/2 tsp. cumin


Chop or shred the chicken

Add chicken to pan
Cook on med. about 10 min. 

Put 1/3 cup of the green sauce on the bottom of the pan
Layer with tortillas
Top with chicken mixture
Top with cheese
Continue layering
Last layer should be tortillas
 Mix the leftover green sauce with 1/2 cup sour cream and 
pour over top the tortillas

That should look creamier, but my sour cream was a little frozen.
Never should have let it get pushed to the back of the fridge. 

Top with cheese
 Bake at 350 for 30 min.



Green chicken enchiladas

Ingredients:
  • 4 chicken breasts
  • 32 oz. can green enchilada sauce
  • Make sure you look at the cans - a lot of them have MSG in them
  • 1 block of cream cheese
  • 5 green onions
  • tortillas
  • cheese
  • sour cream
  • cumin

Instructions:

Cook chicken. 
Put 1/2 can green enchilada sauce in pan along with block of cream cheese, 5 green onions and 1/2 tsp cumin. Add chicken, cook on med for 10 minutes. Now you can start layering. Put a 1/3 cup enchilada sauce in bottom of pan, top with tortillas. Top with chicken mixture and cheese. Continue layering - last layer should be tortillas. Mix rest of enchilada sauce with 1/2 cup sour cream. Top tortillas with sauce. Top with cheese. Bake at 350 for 30 minutes.  Makes 2 8x8 pans or 1 9x13 pan.

It's been a year...

We have been married a year now.

It has been such an amazing year. I fall more in love with this man everyday. God truly gave me the desires of my heart. He is more then I ever dreamed he would be.

This year has taught me that Gods timing is so perfect. It might not line up with how we would like it to be, but it is perfect. If we hadn't waited for Gods timing, we might not have been blessed with each other, or learned what we needed to learn before getting married. I think we appreciate each other more now then maybe we would have if we met at 20. This year has had a few ups and downs but I absolutely love being my sweethearts wife. I can't imagine not being married to my handsome groom.

Our Story : Part 4

We set a date, July 27th, 2013

I picked out a dress.





What a blessing, a couple from my church gave me the money for my dress, even before we were engaged.


We decided on the decorations. 














Truthfully I had decided on these long ago.

We picked a location- an outdoor wedding
We moved our location- due to rain


We chose our bridal party








We decided on dinner.




We asked our pastor to marry us.

And then...

We tied the knot















And lived happily ever after...
